4 boneless, skinless chicken breasts
1 bottle salad dressing (ceasar, ranch, italian, or whichever is you favorite)
1 bag frozen stir fry vegetables
2 tbsp. olive oil
Season chicken with salt and pepper.
Heat oil in a large skillet over medium-high heat. Add chicken; cook 2 minutes on each side, or until golden. Pour dressing on chicken; turn to coat. Cover; reduce heat and simmer 5 minutes.
Add frozen vegetables, cover and cook 5 minutes or until chicken is cooked through and and vegetables are crisp-tender.
Yields: 4 servings
