Streusel - Topped Key Lime Squares

These look complicated but they're super easy and well worth the time!!

1/4 cup butter, softened
1/4 cup granulated sugar
1 tsp. grated lime rind
1/8 tsp. salt
1/8 tsp. lemon extract
1 cup all - purpose flour
2/3 cup granulated sugar
3 tbsp. all purpose flour
3/4 tsp. baking powder
1/8 tsp. salt
1/2 cup fresh key lime juice
3 large eggs
1 tbsp. powdered sugar
cooking spray

Preheat oven to 350 F.

Place first five ingredients in a medium bowl, beat with a mixer at medium speed until creamy. Lightly spoon 1 cup of flour into dry measuring cup; level with a knife. Gradually add1 cup flour to butter mixture, beating at a low speed until mixture resembles coarse crumbs. Gently press two-thirds of the mixture into the bottom of an 8-inch square baking dish coated with cooking spray; set aside remaining flour mixture.

Bake for 12 minutes or until just beginning to brown.

Meanwhile, combine 2/3 cup sugar, 3 tbsp. flour, baking powder, and 1/8 tsp. salt in a medium bowl, stirring with a whisk. Add lime juice and eggs, stirring until smooth. Pour mixture over crust. Bake an additional 12 minutes.

Remove from pan (do not turn off oven!!); sprinkle with remaining flour mixture. Bake an additional 8 to 10 minutes or until set. Remove from oven; cool pan on a wire rack. Sprinkle with powdered sugar before serving.
