Brandy Cream Sauce

4 tbsp. unsalted butter
¼ cup olive oil
½ cup brandy
¾ cup heavy cream
salt and pepper, to taste

Melt butter and oil in a large skillet over medium-high heat. Add brandy and cook off excess alcohol for 1 minute. Add cream and cook until thickened. Serve over chicken or beef.

Yields: about 1 cup of sauce
