Spanglish Sandwich

Ingredients:
(makes 1 sandwich)

3-4 slices of bacon
2 slices of Swiss cheese (or insert your favorite here)
2 slices of toasted rustic country loaf (pain de campagne)
1 tbsp mayo
1 tbsp prepared guacamole
2 leaves of butter lettuce (if you don't have any on hand spinach works just fine)
1 teaspoon butter
1 egg

Directions:

Cook the bacon until crisp, drain on paper towels

Spread butter on one side of each slice of bread; toast under broiler until just browned

Spread mayo on unbuttered sides of bread, add guacamole, top with cheese. Return to broiler and melt cheese.

On non-stick skillet, melt butter over medium heat. Fry egg, turning over briefly when the bottom is set (keep yolk runny)

Layer bacon, lettuce, and egg on one slice of bread. 

Place sandwich on plate and slice in half, letting yolk run down sandwich
