Spinach and Cheese Balls

9 oz. frozen spinach
1 egg, beaten
1 cup parmesan cheese, grated
1 cup mozzarella cheese
1 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. dried oregano
½ cup sour cream
2 tbsp. extra virgin olive oil
15 oz. ricotta cheese
2 cups all purpose flour
¾ cup Italian bread crumbs
1 jar pasta sauce

Bring three cups of water to a rolling boil; add spinach. Cook 3 minutes; drain and squeeze out excess water. Chop spinach.

In a large bowl mix, egg, both cheeses, salt, onion powder, oregano, sour cream, oil, and ricotta until well blended. Add spinach to mixture; mix well. Stir in flour, 1 cup at a time, until well blended. Heat oil in deep fryer or deep skillet to 350 degrees.

Meanwhile, place bread crumbs in a small bowl. Shape spinach-cheese mixture into 1 ½ inch balls; roll in breadcrumbs to coat.

Deep fry 6 balls at a time for 4 to 6 minutes. Remove from oil and set on a paper towel.

Serve with warm pasta sauce.
